Bill Johnson's Big Apple Restaurant

Sat. night Josh & I finally redeemed a gift certificate we'd been given by my cousin for Christmas. It was nice to go out to dinner. They have really good BBQ sauce here. In fact you can even buy it at the grocery stores here it is so popular. Overall though the workers and other diners were a bit strange. I'm not sure if we'd ever go here again but it was fun to go out. We HAD to order dessert to use up the whole gift certificate. Josh was pretty excited about it.
It was actually just mostly whipped cream. There was a river of fudge we eventually tapped into and a brownie and some vanilla ice cream as well. After dinner we went to the Easter Pageant. Last year when we went we took the YW for mutual so I was trying to keep track of them the whole time. This year it was nice to just go and relax and watch the program. I hope we make it every year that we live here.

Easter Treats

Without having regular access to a car I didn't do any Easter treat shopping this year. I've had the ingredients to make these pretzels but hadn't gotten around to making them so I thought I would make them for a treat for Josh. I've made them a few times before but never had much luck with the caramel. They seem to always get stuck to the wax paper. This time I sprayed the wax paper with Pam and it helped immensely. After the caramel hardened I added a layer of milk chocolate. They were really good and considering I made these a few days before Easter not many of them lasted till Easter day but it was ok. They tasted very good and look great in my Fiesta oval platter. I have to add that the caramel I used were called "caramel bits". They are made for melting and saves you the hassle of having to unwrap all the caramel candies. They worked great. I'm not sure if they sell them year round or if they just had them over the holidays. I'll have to look for them next time I make it to a store.

International Waffle Day

I drove Josh to work today so I could keep the car and run some errands. Of course I had to stop at Ikea. While I was there I noticed that in honor of International Waffle Day they were going to have waffles from 2-5pm today only for a mere $2.99 a plate. I mentioned it to Josh when I called later to check on him and he thought that sounded like fun. Luckily he was done with work early enough to go. We each got a thick belgian waffle piled high with delicious whip cream and sliced strawberries. This seemed more like dessert to me but we counted it as our dinner. Yum! What a deal!

Lemon Cupcakes

Last Wed. I hosted a baby shower and made these cupcakes for dessert. I love having this cute cupcake stand to use for entertaining but it's funny because it holds 23 cupcakes so you always have one leftover.
which Josh is always happy about so he can sneak one before the event starts and no one knows.

Happy Valentine's Day!

For Valentine's Day we decided to splurge on this Heart Shape Pizza from Papa Murphy's. It was on sale for $6.99 ($3 off) and I had a coupon for free cheesy bread sticks so it ended up being a great deal. It's the best take and bake pizza and is very reasonable. I'm sure Josh would love it if we got it every Friday night but we only end up getting it once every couple of months on special occassions.
Hope everyone has a very Happy Valentine's Day! We are looking forward to going to Josh's cousin's b'day party tonight and hanging out with some of his relatives.
